
"Eight Treasures Tofu" is a star dish in Tianjin-style cuisine. In 1992, it was created by Wang Jianhua, a chef at Suiyuan Restaurant, inspired by the famous dish "Family Reunion." The cooking incorporates Cantonese seasonings such as chu hou sauce, oyster sauce, and light soy sauce, enriching the flavor. The ingredients include sea cucumber, fish maw, dried scallops, shrimp, tendon, squid, shiitake mushrooms, and winter bamboo shoots—eight types of ingredients—which are braised until flavorful and then placed on top of the tofu. The dish has a reddish-brown color and a fresh, savory taste.
