Gaba Cai is a quintessential Tianjin specialty and one of the reigning champions of breakfast. It serves as both a staple food and a soup. The thin mung bean crepes, cut into strips, constitute the staple, while a generous ladle of thick gravy poured over them serves as the soup—offering both something to chew and something to sip. Vegetarian ingredients with a savory meat-like flavor—this is the essence of Tianjin Gaba Cai. In May 2023, an original Tianjin-style play titled The Love of Gaba Cai made its stage debut, adding a cultural dimension to this Tianjin specialty.
