Guangzhou

As the 19th solar term in the Chinese lunar calendar and the inaugural term of winter, the Start of Winter (Lidong) marks the beginning of a period of rest and storage for all creatures.
In the north, the cold air has already gained strength and is gradually pushing southward, heralding winter's arrival. However, for regions south of the Yangtze River, the true feel of winter lingers until late November. In Guangdong, with its subtropical climate, the Start of Winter is still met with relatively warm weather.
For millennia, the custom of nourishing the body during the Start of Winter has been deeply ingrained in Chinese folk tradition. In Guangdong, a province renowned for its rich culinary culture, the foods associated with this solar term are particularly representative. So, what do Guangdong residents indulge in on the Start of Winter?
Hot Pot
Guangdong people refer to hot pot as 'Da Bian Lu'. With a strong emphasis on broth, Guangdong-style hot pot naturally boasts a superb soup base infused with an array of seafood and mountain delicacies. As the Start of Winter approaches, people gather to enjoy hot pot with mutton, revelling in the warmth and feast.

Ginger Duck
Ginger duck, a traditional food from southern China, is popular in Fujian, Taiwan, Guangdong, and other regions. On the day of the Start of Winter, people enjoy duck meat as a nourishing delicacy. Made with duck and ginger slices, ginger duck offers a warming sensation that is greatly cherished.

Sugarcane
A saying goes in the Chaoshan region of Guangdong: "Eating sugarcane on the Start of Winter keeps ailments away." Ancestors in Chaoshan believed that consuming sugarcane during this period could protect teeth and nourish the body. Sugarcane harmonizes the body, alleviates dryness, clears heat, and dispels vexation, making it beneficial for sore throats, constipation, and deficiency-heat coughs.

Chaoshan-style Fried Rice
On the day of the Start of Winter, Chao Xiang Fan, made with peanuts, mushrooms, chestnuts, shrimp, carrots, and other ingredients, is a favorite among Chaoshan residents. Chestnuts, rich in nutritional value and boasting a rich, crispy texture, are a premium addition to this fragrant rice dish and a hot commodity in the market.

As the Start of Winter ushers in a season of nourishment and warmth, Guangdong residents embrace these traditional foods not only to savour their unique flavours but also to honour the age-old customs that connect them to the rhythms of nature and the changing seasons.
