Hangzhou - Linping
As an important node of the Grand Canal cultural belt, Linping, known for its long histroy of “hustle and bustle” and foods’ variety, has formed its unique water town culinary culture and is home to numerous culinary stories. Among them, the most representative ones are Braised mutton in brown sauce, Tangxi duck, Sheeptail dessert, and Sticky rice meatball. The Braised mutton in brown sauce in Linping is made with high-quality Huzhou sheep as the food material, and is slowly stewed with private techniques. It tastes soft and suitable for all ages. Tangqi duck, after being smoked, roasted, and cooked, has a bright red color, a fresh and tender taste, and a refreshing and delicious aroma. Sheeptail dessert is mainly made of pork fat and red bean paste, which are crispy on the outside and sticky on the inside after deep frying, sweet but not greasy; Due to its resemblance to a sheep tail, hence the name of the dish. The sticky rice meatball made of fresh meat and glutinous rice is slightly larger than the table tennis ball. Because the sticky glutinous rice on the meatballs sticks up like a hedgehog, people call it "hedgehog" as "thorn hair", so it is named "thorn hair meatballs", and later "Sticky rice Meatballs".
