Songzi Buckwheat Doupi is the second geographical indication trademark product of Jingzhou, approved by the Trademark Office of the State Administration for Industry & Commerce, Shishou Bijia Fish Maw being the first one.
This product is a traditional handmade specialty, which originates from Wangjiaqiao Town (the original Mashui Town). The raw materials mainly include buckwheat, rice, potatoes and mung beans.
The traditional procedure to make it is as follows: soak the buckwheat and rice in boiled water, blend and grind them into mixture like paste, add potatoes starch and mung beans starch of certain proportion, mix them well, pour the mixture onto a hot pan and spread it thin, take it out and let it cool down, chop it into shreds and have it air-dried. Because of its rich nutrition and convenience, it’s a kind of quite popular food.
