There are two kinds of pork tendons: fresh and dried. The former, if soaked in water, can be used as material, the latter must be made to puff again with water, oil and salt respectively. The dried tendon immersed in water is the best for cooking. Firstly, you need to stir-fry the ingredients such as diced chicken breast meat, diced ham, diced mushroom, diced cooked bamboo shoots, diced beans in the pot with cooked oil, then add Shaoxing rice wine, refined salt, chicken soup and the tendons and continue to stir-fry. When it boils, you should cook it with low heat, and then cook it with high heat to make it sticky before you pour sesame oil onto it and put it on the plate.
This dish, with bright colors, is pretty tender, fresh and tasty while it is still hot.
