Nanjing cuisine, also known as Jingsu cuisine, Jingsu dainty cuisine, and Jinling cuisine, refers to the cuisine centered on Nanjing and extending to Jiujiang, Jiangxi. It is one of the four representative dishes of Su cuisine. Seven flavors and seven tastes of Nanjing cuisine are"fresh, soft, crisp, tender, crunchy, thick, fat"and "sour, sweet, bitter, spicy, salty, fragrant, stinky".
The highlight of Nanjing cuisine is duck delicacies. In addition, it also includes traditional Nanjing dishes, Nanjing native dishes and Nanjing wild vegetables, etc. The dishes meet the taste of people from both north and south, showing characteristics of all other cuisines around China.
